Bread proofing baskets, also called bannetons or their German name ‘brotform’, are used to form and rise doughs in, prior to baking.
Bannetons are used to create beautiful spiral patterns on the dough loaf, which is tipped out of the banneton before baking, usually into a cast iron pot or onto a baking stone, brick hearth or oven tray. This is what your loaf will look like when you use a banneton and follow our methods for making sourdough bread. And it tastes as good as it looks!
We are now able to offer bannetons so that everyone can make lovely loaves of bread. The bannetons are made of willow and have excellent breathing and thermal characteristics. To get the best out of the banneton, just dust the inside of the banneton generously with a flour before inserting your dough. Repeating the process for each loaf is necessary, however less flour will be required as the banneton matures. Flours that can be used for dusting include rice flour, millet flour and polenta.
We have two banneton forms available for purchase at very competitive prices.
A 20cm (approx 8 inch) circular form. The price is $22
A 25 cm (approx 10 inch) rectangular form. The price is $22
How do I go about ordering a proving basket 25cm. one!

Hi Gail,
I am sorry but I do not have a 25cm proving basket. That would be for a very large loaf of bread.
All the best,
Kate
