 Organic, light sifted spelt flour from Callington Mill at Oatlands, Tas.
Here at last! Light sifted means that more than 50% of the bran is sifted out, making this a less heavy spelt flour. Suitable for bread making and, well, just about everything!

Rapadura sugar, coconut flour and oil: all organic 
None of these are Australian but so many people have asked for them I have relented. Now you have to buy them!

Product Notes

Four Leaf grains, flours, seeds and pulses: I only keep in stock 5kg bags which I am happy to decant into smaller amounts for you. I find 5 kg bags easy to carry and store. Many people order larger bags, up to 20kgs and I am happy to get them in at no extra charge since I have fresh supplies arriving every week.

Rain-fed rice, Tasmanian quinoa, Mt. Zero red and green lentils, Quinoa flour etc: These mostly come to me in 20kg bags which I decant into smaller quantities as required. I never buy more than 1 bag at a time so they are always fresh. I also buy these and most other products direct from the farmers, with no middleman.

Dried fruits come in boxes of 5, 10 or 12 kgs, direct from all the individual farmers. No matter how big their enterprise they will always go out of their way to fill my tiny order. I love them all; must be the sugar in the fruit that makes them such a sweet bunch!

Spices:  I order the minimum amount which is 1kg and this is stored in the dark, in airtight boxes until required. All spices are packed fresh for every market and are never stale. Between markets those not sold at the market are given away in my spend $20 and get $2 of free spices, deal. ($40 = $4 free spices etc)

My Story

Until I came to Tasmania in March 2010, I was always the customer and had never done anything like GaSP before.

So, I started with the idea that if I could please me, Kate the customer, I would please others as I am a VERY fussy shopper!!

One by one I started sourcing the wonderful products I used to buy in SA but could not get here in Tasmania, with the same ethical standards I expected.

One by one I rang the farmers to find out their stories and decided that buying directly from them was the only way to find out everything I wanted to know about their products.

Then I was in a quandary; my philosophy is to buy local, very local, and here I was buying from farmers all over Australia.

So, I made a decision. I would source everything as locally as I could, starting with Tasmania and always buy Australian if available. Very little of my range comes from outside Australia, except spices, which are rarely grown in Australia anyway.

Interestingly I find it very difficult to get access to Tasmanian products direct from the farmer and to have them sent to me from elsewhere in Tasmania costs more than the freight from anywhere else in Australia!! I ring and leave messages, I send emails and I rarely get a reply from Tasmanian farmers. Which is so completely the opposite to all the mainland farmers who love to help me get their products onto my small shelves.

February at The Cygnet Market

My market stall on the stage at The Cygnet Market is where I showcase almost my full range of Garden Shed and Pantry products.

I guarantee that my products are fresh and I have a following of avid spice lovers who know to come to me for all their requirements as my spices are kept sealed and in the dark between markets. I also have yoghurt cultures and soon, milk kefir, when mine starts to multiply. English watering cans and best quality garden tools are my passion and I stock local seeds for growing the best vegetables in the Tasmanian climate. As well, I offer an eclectic range of garden and food books and Tasmania’s Clean Conscience eco-cleaning products.

If you would like a 5kg bag of anything from my lists below, please send me an email and I will hold one aside for you as I only take a limited number of them and they sell quickly. Gluten free is a special interest of mine.

The market is now one of the best in Tasmania not just for tourists but for those wanting to buy fresh, organic vegetables, fruits, breads, cheeses, wholefoods, dried fruits, olives, olive oils, eggs and coffee. Artisan cakes and pastries as well as Sally’s superb Chinese dumplings, fresh stir fries and savoury pancakes nestle into the hall with Ed’s perfect English pork pies and Cathy’s moist Dundee cake.

Annie is a milliner and her hats are world class; all designed and made by her in Cygnet. You will also find an extensive and infectious collection of rocks, fossils  and more from around the world, at Mike’s stall. Add to that the craftsmanship of local artists, sewers, photographers and card makers and you can soon see that Cygnet is the place to be on the 1st and 3rd Sundays, 10am – 2pm, all year round!

The early bird…

Well, it’s now officially December.  And it’s just a few weeks to Christmas.  Avid market fans know that they need to be arriving early to get the best pickings…pretty similar to a garage sale really…. but this time, simply by buying something from our stall, early birds can have some free raspberry canes, dug from my garden a few days ago. They have been kept in a bucket of Seasol, in the shade and are bursting to get growing in your garden.

What do we have this week?  Organic Sprouting Mix, Dried Figs, Almonds and lots of other snack packs, marinated olives and olive oil (of course), and organic grains including Quinoa.  For Christmas presents, we have gardening tools and beautiful watering cans (but not many left now).  For the person who loves to cook, we have brass spice grinders from Turkey.  It’s not too late to grab some MRO organic dried fruit for the Christmas Cake.  Maybe we will still have a Panforte or two but they are disappearing fast!

Organic dried figs

Turkey is the biggest dried fig producer and exporter in the world.  Approximately 2/3 of the world’s dried fig production and 3/4 of the world’s fig exports come from Turkey.  Figs were cultivated in their motherland Anatolia in the years of 3000-2000 B.C. and they were spread through the Mediterranean from Anatolia within time.  Turkish dried figs are grown under natural conditions and harvested and sun dried on racks under controlled conditions.  Figs were a staple food for the Romans.

Figs are one of the highest plant sources of fibre and calcium.  Figs also contain:

  • high levels of fibre, magnesium, iron (non-heme), copper, manganese, potassium, calcium and phosphorus.
  • more antioxidants than apricots, cranberries, dates, raisins and plums.
  • some B vitamins.

Figs are a great energy food and can be soaked in water for better digestion.  Organic dried figs make delicious lunch box treats and are great for cooking.

 Organic dried figs are available in three sizes:

  • 200 gram snack pack
  • 500 gram bag
  • 1 kg bag

Renovations! GaSP!

A few months ago I had my thirty metre poplar tree chopped down.  It was on the north side of the house and took away all of my winter sun.  Even worse, the roots had spread and I feared they were going to damage the foundations of the house.  Now the top of the tree has been turned into a huge pile of mulch and the bottom of the tree has been cut and shaped into wood to make a garden setting.

A few weeks ago, the pantry was closed while we removed everything to install new shelving.  The pantry also received a fresh coat of paint.



My tree lopper / qualified carpenter, Corey (from Treemendous) , found the timber for free – local, recycled timber apple crates – saved in the nick of time from being burned!

I call this gourmet rustic.



Corey did a great job to put in new flooring and shelving and work out with me what would fit best.

So now I have lots of shelving on the left hand side (even a high shelf for displaying books) and lots of bench space on the right hand side.





There are special shelves for spices and a hanging wall for the seed racks.  It’s really great and I would love you to visit and check it out.
